Fireworks and barbecue to ‘sizzle’ at Edinburg’s Texas Cook’Em this weekend

It’s about to get hotter in South Texas.

Edinburg’s annual Fourth of July celebration, Texas Cook’Em: High Steaks in Edinburg, is returning for a holiday weekend extravaganza of barbecue, music and fireworks that organizers say will “sizzle.”

Scheduled for Friday and Saturday, the event will be held at the Ebony Hills Golf Course, located at 300 W. Palm Drive in Edinburg, and will include a $25,000 payout for the winners of the barbecue cookoff competition.

The cookoff is sanctioned by the Champions Barbecue Alliance and has become a staple at the event, which has for years pitted (pun intended) griller against griller to see who has the most savory meat.

Contestants ranging from small business owners to residents looking for bragging rights and some extra cash often arrive early at the event, sometimes in the wee hours of the morning, to get to cookin’.

In addition to an H-E-B Steak Challenge, there will be team categories for chicken, ribs, brisket and rib-eye steak.

Held Saturday, cookoff turn-in times are noon for the chicken category, 1 p.m. for the ribs, 2 p.m. for the brisket and 3 p.m. for the rib-eye steak, an event sanctioned by the Steak Cookoff Association.

Here’s how to sign up for a chance to judge the cookoff. Judges must be 18 or older and arrive 30 minutes prior to the individual category turn-in times.

But there’s also a lively crop of performers primed to hit the stage at the event, including country music singer Aaron Watson who will be playing a free concert at 9:30 p.m. Friday.

Other performers include No Doubt and Foo Fighters cover bands.

Additional events consist of the following:

>> Freedom Yoga at 8:30 a.m. Saturday;

>> the third annual Cars and Stripes car and truck show from 4 to 8 p.m. Saturday;

>> Independence Day Night of Champions Boxing at 7 p.m. Saturday;

>> Sizzle and Stripes Fireworks Show at 9:15 p.m. Saturday.

There will be awards for the top 30 in the car and truck show, and the boxing event may change from 7 p.m. to 8 p.m. depending on the heat conditions that day.
