Ingredients
2 avocados
3-4 cloves garlic
2 cups mint leaves
1/3 cup pistachio
1/2 teaspoon red pepper flakes
1/2 teaspoon salt
1/2 teaspoon ground black pepper
1 lemon, juice and zest
1 tablespoon extra virgin olive oil
1/4 cup grated parmesan
Instructions
1. Bring all ingredients together into a food processor.
2. Blend on medium speed until a smooth paste forms.
3. Mix with your favorite variety of pasta, spread on slices of baguette or serve as a dip with chips or veggies.
